Matar-Paneer
Matar-Paneer is a popular vegetarian North Indian dish. It is prepared by cooking fresh cottage cheese and peas with spicy tomato gravy. It is very tasty and can be prepared easily in a very short amount of time. Mostly it is served with rice, roti, naan, paratha, poori etc. Recipe and ingredients of making matar-paneer for three to four persons are as follows –

Preparations
1. Boil peas for about 15 minutes.
2. Soak cashew nuts in warm water for 20 to 25 minutes. After that, add a few spoons of water to it and make a paste.
3. Chop the cottage cheese into 3/4 inch cubes.
4. Chop onion, garlic, ginger, green chili, etc. into small pieces and grind all together on a grinder or cob to make a coarse paste.
5. Chop the tomatoes into small pieces and make a puree in the grinder.
Recipe
1. Heat oil or ghee in a pan on medium heat.
2. After half a minute, when the oil or ghee becomes slightly warm, add the prepared onion paste.
3. Cook the paste while stirring it for five to seven minutes. In a short time, oil or ghee starts separating from the paste. Now the onion paste is completely cooked.
4. After the onion paste is cooked, add the prepared tomato puree in it.
5. Cook the mixture again by stirring it for five to sever minutes.
6. After cooking for a while, when oil or ghee starts separating from the mixture, add salt, red chili powder, turmeric powder, garam masala powder, green coriander, etc. to the mixture and cook for about a minute.
7. Add cashew paste to the mixture and cook again for a minute.
8. Now add boiled peas and a half cup of water in the mixture and stir the mixture well. After this, leave the mixture to cook for two to three minutes.
9. After this, add the previously chopped cottage cheese pieces and let it cook for two to three minutes.
10. When the matar-maneer is ready, take the pan off the heat. After this, to serve the matar-paneer, take it out in a vessel and decorate it with green coriander leaves, cashew nuts, etc. It makes matar-paneer more delicious and good looking.
7. Add cashew paste to the mixture and cook again for a minute.
8. Now add boiled peas and a half cup of water in the mixture and stir the mixture well. After this, leave the mixture to cook for two to three minutes.
9. After this, add the previously chopped cottage cheese pieces and let it cook for two to three minutes.
10. When the matar-maneer is ready, take the pan off the heat. After this, to serve the matar-paneer, take it out in a vessel and decorate it with green coriander leaves, cashew nuts, etc. It makes matar-paneer more delicious and good looking.
11. Serve it with green salad and raita.

Suggestions
- You can increase or decrease the quantity of peas, cottage cheese or spices according to your taste.
- You can increase or decrease the amount of water to dilute or thicken the gravy in matar-paneer.
- Some people found fried cottage cheese more delicious. If you do not care for excess oil or ghee, you can use golden fried cottage cheese instead of the ordinary one.
- Cream or milk cream can also be used along with cashew paste.
