Dhokla is a popular traditional dish of Gujarat. It is very light, juicy and tasty. It is preferred to eat mostly in the breakfast, evening snack or as a dessert after a meal. It is also very good for health due to the low use of oil. It can be made easily in 25 to 30 minutes.

Traditionally we can make gram flour Dhokla in a Dhokla maker on a gas stove or by placing a small plate on a stand over water in a pressure cooker. It takes a lot of time to make Dhokla through this method. We can also make it with the help of the microwave. In the microwave, Dhokla is cooked in a very short amount of time, as well it makes Dhokla very soft and spongy. The ingredients and recipe of Dhokla for six to seven people is as follows

Dhokla Recipe

1. To prepare Dhokla, first prepare the batter of gram flour and semolina. For this, take gram flour and semolina in a big bowl and add some water in it and keep stirring until all the lumps are finished. Keep in mind that the batter should neither be too thick nor too lean.
2. Now mix salt, sugar, lemon juice and ginger paste in the prepared solution. 

3. After this, keep the prepared solution for a while, so that the gram flour and semolina become well prepared. 
4. To cook in the microwave, apply oil in a microwave vessel and lubricate it. It will not stick the Dhokla batter in it.
5. After this, put Eno fruit salt in the prepared batter and mix it well. Take out the batter in already prepared microwave vessel and keep it in the microwave.
6. Now set the microwave at maximum temperature for 5 minutes.
7. When the time is over, take the pot out of the microwave and check it by putting a knife in the Dhokla. If the knife does not come out clean then put the Dhokla again the microwave for 1 or 2 minutes.
8. Keep the Dhokla to cool down.

Recipe for the Tadka

1. Put a little oil in a pot and heat it on medium flame. 
2. Once the oil becomes hot, add one teaspoon of Rai seeds. When the Rai seeds start to crackle, add curry leaves and green chilies to it and let it cook for a few seconds.
3. Now add half a cup of water and a teaspoon of sugar and cook till the sugar dissolves well. When the Tadka is ready, turn off the flame.
4. Cover the Dhokla vessel with a plate on it and roll over the vessel. In this way, the Dhokla will come out of the vessel on the plate. 
5. Now cut the Dhokla into desired shape and size. Pieces should not be too small.
6. Pour the Tadka water on the Dhokla with a tablespoon. When the Dhokla becomes soft after soaking water, garnish it with coriander leaves and Tadka Chilies. 
7. Serve the Dhokla with tomato sauce and green sauce. 


Precautions 


  • There should be no lumps in the solution while making the batter. 
  • After adding Eno fruit salt to the batter, immediately place it in the microwave to cook. Eno fruit salt acts rapidly in solution. This can spoil the batter if left for too long.
  • A wide-open less deep vessel should be used to cook the batter. This makes it easy for Dhokla to come out of the vessel after cooking. 
  • The vessel should not be completely filled with the batter. While cooking it the microwave, the Dhoka bloat so that it can come out of the vessel. 
  • Dhokla should not be cut into very small pieces.

Suggestions

  • You can also use curd in Dhokla batter.
  • If you want, you can also use turmeric powder in the Dhokla batter.
  • Grated coconut can also be used along with coriander leaves to decorate Dhokla. It makes Dhokla good looking as well as tastier.
